1 tsp Curry powder

3 Tbsps Pastry flour
2 eggs
100 grams Shredded coconut
vegetable oil for frying (or coconut oil)

Preparation steps

1.

Rinse the chicken, pat dry and cut into bite-sized pieces. Season with curry, salt and pepper and coat with flour. Beat the eggs in a deep dish and place the shredded coconut in another separate deep plate.

2.

Dip the chicken pieces in egg and coat with coconut. Fry, in batches, in hot oil 2-3 minutes until golden brown. Drain on paper towels and serve garnished as desired with lettuce and onions.
