A perfectly fried fried egg is a must for this classic. With these tips it is guaranteed to succeed: Melt some butter in a non-stick frying pan. This way you can easily remove the egg from the pan later. Break the egg in the middle of one edge and let it slide carefully into the hot fat. Preparation steps
Rinse spinach, shake dry, trim and blanch in a pot of boiling salted water. Drain, rinse with cold water and drain again. Rinse scallions, trim and cut into rings.
Peel garlic, chop finely and sauté in a large saucepan with 3 tablespoons oil. Add scallions. Add spinach, sauté briefly and season with salt, pepper and nutmeg.
Melt butter in a large frying pan, break eggs into it, fry as desired for fried eggs and season with salt and paprika. To serve, arrange spinach mixture on plates, place 1 fried egg on top and serve immediately.
