Preparation steps

1.

Rinse, trim, and thinly slice the eggplant. Sprinkle with salt, and set aside for 20 minutes.

Heat the oil in a large pot to approximately 340°F. Pat the eggplant dry and fry in the oil. Remove from the oil, and drain on paper towels. Sprinkle with sea salt, and serve stacked on a serving plate.
