- 2 medium-sized Eggplant
- 4 Tbsps olive oil
- salt
- freshly ground pepper
- 1 cup (200 grams) Natural yogurt
- 2 sprigs fresh oregano
Preparation steps
1.
Rinse eggplant, pat dry, trim and cut into long slices. Heat oil in a pan and fry eggplant slices on both sides until golden brown. Cool on a paper towel.

Arrange eggplant slices on a plate and season with salt and pepper. Stir yogurt in a bowl until smooth and pour over eggplant slices. Rinse oregano, shake dry, pluck leaves from stem. Serve garnished with oregano.
