Fried Potatoes and Artichokes

- 1 kilogram potatoes
- salt
- 50 milliliters lemon juice
- 6 Artichoke (about 275 g)
- 4 shallots
- 3 garlic cloves
- 200 grams Cherry tomatoes
- 12 Sage
- 6 Tbsps olive oil
- freshly ground peppers
Preparation steps
Rinse the potatoes and boil in salted water for about 20 minutes. Drain, rinse with cold water, peel and quarter lengthwise.
Fill a large pot with 1 liter of water (approximately 4 cups) and season with a little salt and the lemon juice.
Remove the stems from the artichokes and cut off the tips (approximately the upper third). Remove the tough outer leaves. Add to the lemon water in the pot and bring to a boil. Simmer uncovered over low heat for 10 minutes. Remove from heat and set aside.
Peel the shallots and cut lengthwise into slices. Peel the garlic and slice thinly. Lift artichokes from the pot and cut into quarters lengthwise, removing the choke from the center. Rinse and halve the tomatoes.
Heat the oil in a large nonstick skillet. Fry the potatoes and artichokes over medium heat for 6-8 minutes until golden brown. Add the shallots and garlic and fry for another 5 minutes. Add the tomatoes and sage, stir and fry for another 2 minutes. Season with salt and pepper and serve.
