- 300 grams Chanterelle
- 500 grams small potatoes (predominantly waxy)
- 60 grams streaky, smoked Bacon
- 4 Tbsps clarified butter
- 2 onions
- 400 grams Beef fillet (tail)
- salt (and pepper)
- 2 Tbsps scallions
- 1 Tbsp chopped parsley
Preparation steps
1.
Wipe the chanterelles and chop if needed. Peel the potatoes and cut into wedges. Chop the bacon into cubes.

Heat 2 tablespoons of butter in a pan and fry the bacon in it. Remove the bacon and set aside. Place the potatoes in the bacon grease and sauté over moderate heat for about 20 minutes, stirring from time to time.

Peel the onions and cut lengthwise into slices. Cut the beef into bite-sized pieces.
Heat the remaining butter and fry the beef. Add the chanterelles and onions and fry for another 10 minutes. Mix everything with the potatoes and the bacon. Simmer over low heat and stir in the herbs.
Season with salt and pepper and serve hot.
