Fried Prawns with Guacamole and Radicchio
Ingredients
- For the guacamole
- 1 small shallot
- 1 Tomato
- 1 little green chili pepper
- 1 garlic clove
- 1 ripe Avocado
- 1 Tbsp lemon juice
- salt
- freshly ground peppers
- Tabasco sauce
- For the prawns
- 6 King prawn (per person)
- 2 Limes
- 4 Tbsps butter
- 4 Tortilla chip
- 1 small Radicchio
- 4 lemon juice
- 1 vegetable oil
Preparation steps
For the guacamole, peel the shallot and cut into fine dices. Blanch the tomatoes, peel, cut in half, remove seeds and cut the pulp into cubes. Rinse the chile pepper, trim, remove seeds and finely chop. Mix the shallot, tomatoes and chile pepper together in a bowl. Peel the garlic and squeeze. Cut the avocado in half, peel and remove the stone. Puree the avocado pulp with lemon juice in a blender. Stir the tomato mixture into the avocado puree. Season with salt and pepper, stir in the Tabasco to taste.
For the prawns, peel the king prawns, remove the gut, rinse and drain. Toss the prawns with a little lemon juice and fry in a pan in butter.
Cut the radicchio into thin strips. Mix together the oil and lemon zest, and toss the radicchio in it.
Divide the radicchio onto the plates and place one prawn over each. Serve with guacamole and garnish with tortilla chips and lime wedges.
