- 2 Tbsps olive oil
- 18 ozs baking potatoes (finely chopped)
- 1 onion (cut into rings)
- 4 eggs
- 4 Tbsps Sour cream
- 1 Tbsp fresh parsley (chopped)
- ¾ cup canned Kidney beans (drained and washed)
- ⅖ cup canned Sweet corn (kernels)
- 6 thin slices Turkey ham approx 100 g (3 1/2 oz), cut into strips
Preparation steps
1.
Heat the olive oil in a skillet and fry the potatoes for approx. 10 minutes at a medium temperature.

Add the onion and fry gently for a further 5 minutes, stirring occasionally, until the potatoes soften. Season with salt and pepper.

Whisk together the eggs, sour cream and parsley and season with salt and pepper. Pour over the potatoes, mix in the sweetcorn kernels and the beans and lay the turkey ham strips on top.
4.
Allow the tortilla to solidify on a low heat for 10–15 minutes. Cut into 4 pieces and serve garnished with lettuce.
