- For the cupcakes
- ¾ cup butter
- ⅔ cup superfine caster sugar
- 4 eggs
- 1 unwaxed Lime (juice and zest)
- 1 ¼ cups self-rising flour
- ½ cup ground almonds
- ½ tsp Baking powder
- To decorate
- 1 ¼ cups softened butter
- ½ cup superfine caster sugar
- 1 ¼ cups cream cheese
- 2 ½ cups powdered sugar

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line the holes in a muffin tray with paper cases.
2.
Cream together the butter and sugar until light and fluffy. Whisk the eggs with the lime juice and zest and then mix into the butter and sugar together with the flour, almonds and baking powder. Beat together well and spoon into the cases. Bake in the oven for around 25 minutes until golden brown, then remove from the oven and leave to cool.
3.
For the topping, cream together the butter and sugar until thick, then stir in the cream cheese. Mix in enough icing sugar so that the mixture can be piped. Spoon into a piping bag with a plain nozzle and pipe onto the cupcakes. Decorate with sugar sprinkles.
