1 Vanilla bean (seeds scrapped out)
2 small Apple (peeled, cored and diced)
4 Tbsps sugar
1 cup Apple juice
powdered sugar
1 cup milk
4 Tbsps ground poppy seed
4 Ladyfinger

Preparation steps

1.
Mix together the cornflour and the vanilla seeds.

Place the apple in a pot with 2 tbsp sugar and 200 ml apple juice. Simmer for 3-4 minutes then remove 4 tbsp of apple pieces and set aside to garnish.

Mix together the remaining apple juice and half the cornflour-vanilla mixture until smooth. Heat in a pot, stirring continuously, for 2-3 minutes until the mixture thickens. Remove from the heat, dust with icing sugar and leave to cool a little.

Mix 200 ml milk with the remaining sugar and the ground poppy seeds and bring to the boil. Mix the remaining cornflour-vanilla mixture with the leftover milk (50 ml) and stir until smooth. Stir into the hot milk and simmer until the mixture thickens. Set aside, dust with icing sugar and leave to cool.
5.
Layer each type of cream into four dessert glasses. Garnish each one with a sponge finger and the apples set aside in step 2. Sprinkle with poppy seeds and serve either warm or cold.
