Ingredients

For the filling
¼ cup caster sugar
3 cooking Apple (peeled and roughly chopped)
water
2 tsps ground cinnamon
For the crumble
½ cup dairy-free margarine
1 cup self-rising flour
0.333 cup sugar
¼ tsp salt
2 Tbsps rolled oats
2 Tbsps chopped Walnut
1 Tbsp brown sugar

Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4 individual pudding basins or baking dishes.

For the filling: put the sugar and apples into a pan. Add just enough water to just cover the mixture. Heat gently, stirring now and again until the sugar has dissolved, then increase the heat and bring to a boil. Reduce the heat and simmer gently for 4-5 minutes, until the fruit has softened.

For the crumble: put the margarine, flour, sugar and salt into a mixing bowl and rub together with your fingertips until the mixture resembles breadcrumbs. Stir in the oats and walnuts until well combined.

Sprinkle the apple mixture with cinnamon and spoon into the pudding basins. Top with the crumble mixture and sprinkle with demerara sugar.
5.
Bake for about 10-15 minutes, until the crumble is golden brown.
