- 0.333 cup light brown sugar
- ⅕ cup butter (melted)
- 20 ozs canned Pineapple (rings)
- 1 cup self-rising flour (heaped)
- 1 pinch Baking powder
- ½ cup caster sugar
- ¼ cup butter (softened)
- ½ cup milk
- 1 large egg
- ½ tsp vanilla extract
- To decorate
- 6 Candied cherry (halved)

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 12 muffin tins.

Combine the brown sugar and butter until blended. Spoon into the tins and place a pineapple piece on top.
3.
Put the remaining ingredients in a mixing bowl and whisk with an electric whisk until smooth and blended.
4.
Spoon over the pineapple and bake for 20-25 minutes until golden and risen. Cool in the tins for a few seconds, then invert onto non-stick baking paper and place a cherry half in the centre of each pineapple ring.
