cup butter (chopped)

4 eggs (separated)
2 ¼ cups cream cheese
1 ¾ cups Sour cream
cup sugar
1 tsp lemon juice
1 tsp lemon zest
2 tsps Corn starch
1 Vanilla bean (seed scraped out)
4 sour Apple (e. g. Granny Smith; peeled, cored and sliced)
cup Calvados
2 Tbsps sugar

Preparation steps

1.
To make the base, mix together the flour, sugar, cocoa and a pinch of salt. Pile onto a work surface and create a well in the middle. Crack the egg into the well and place the butter around it. Quickly knead into a smooth pastry, shape into a ball, wrap in cling film and chill for 30 min in the fridge.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a baking dish with butter.

To make the topping, mix together the egg yolks, cream cheese, sour cream, sugar, lemon juice and zest, cornflour and the vanilla seeds. Beat the egg whites with a pinch of salt until stiff and fold into the cheese mixture.

Roll out the pastry on a floured work surface slightly bigger than the baking dish and place it in the dish creating an edge all the way round.

Spread the cheese mixture onto the base and place the apple slices decoratively on top. Drizzle with the Calvados, sprinkle with sugar and bake for 45-60 min. Cover with greased baking paper to prevent the cake browning too quickly.
6.
Remove from the oven and leave to cool. Remove from the dish and dust with icing sugar. Serve sliced.
