For the batter
2 eggs
1 ⅔ cups Whole milk
1.333 cups flour
1 Tbsp sugar
For the filling
1 Orange (juiced)
1 Tbsp sugar
4 Apple (peeled, cored and chopped)
1 Tbsp butter
3 Tbsps Marmalade
For the vanilla sauce
2 egg yolks
1 Tbsp sugar
1 Tbsp Corn starch
1 ½ cups milk
1 Vanilla bean (halved lengthways)

Preparation steps

Mix together the eggs, milk, flour and the sugar and leave to steep for 20 min.

Mix together the orange juice and sugar and bring to the boil. Add the apples, cover with a lid and braise on a low heat. Stir in the butter and the marmalade. Bring to the boil, stirring continuously and then remove the pot from the heat.

To make the vanilla sauce, mix together the egg yolks, sugar, cornflour and around 50 ml milk. Place the remaining milk in a pot and add the vanilla pod. Bring to the boil then remove from the heat, cover with a lid and leave to steep for around 15 min. Remove the vanilla pod. Stir in the egg yolk-sugar-cornflour-milk mixture, return to the heat and heat gently, stirring continuously. Do not allow to boil! As soon as the sauce thickens, remove from the heat.

To make the pancakes, heat some butter in a pan and make 8 thin pancakes from the batter. Fill with the apple mixture and fold into small parcels. Arrange on plates, add 2-3 tbsp vanilla sauce and serve hot.
