- 1 shallot (finely chopped)
- 2 Tbsps butter
- 1 ½ cups Risotto
- ⅜ cup white wine
- 2 ½ cups vegetable stock
- 4 Kaffir lime leaves
- 2 ⅔ cups Rhubarb (diced)
- 3 cups Tuna (sushi quality, diced)
- 2 Tbsps grapeseed oil
- 1 organic lemon (juiced and zest grated)
Preparation steps

Fry the shallot in hot butter and add the rice. Deglaze with the white wine and add enough stock to cover the rice. Add the kaffir lime leaves and, stirring occasionally, continue to add stock until the risotto takes on a creamy consistency (approx. 20 mins). After 10 minutes add the rhubarb.

Mix the tuna with the grapeseed oil, lemon juice and zest, season with salt and ground black pepper and leave to steep.
3.
Re-season the risotto and arrange on preheated plates. Place the tuna on top and serve.
