For the salad
4 Tomatoes
1 green paprika
1 bunch scallions
1 onion
1 garlic clove
1 chili pepper
1 Tbsp vegetable oil
4 sprigs thyme
1 large Mango
600 grams White fish
100 grams Bacon
For the dressing
1 lemon (squeezed)
50 milliliters white wine
1 Tbsp Fish sauce
6 Tbsps vegetable oil
salt

Preparation steps

Rinse the tomatoes and cut into thin wedges. Rinse the pepper, trim, cut in half, remove the seeds, remove the white membranes and cut the flesh into thin strips. Rinse the chile, cut in half lengthwise, remove the seeds, remove the white membranes and finely chop. Peel the onion and cut into thin half-rings. Cut the scallions into 3-4 mm (approximately 1/8 inch) thick rings.

Saute the onions in a little oil until soft. Prees the garlic and add with the chile. Deglaze with white wine and let simmer. Cut the fish into cubes, add to the hot pan and let stand until cooked through. Add the lemon juice, thyme and fish sauce and season with salt and pepper.

Peel the mango, remove the seed and cut into cubes. Mix with the tomatoes and the peppers, add the fish with the broth, add the oil, and mix everything gently. Spoon into a serving bowl and serve warm.
