2 female Pheasant (each approx. 800 g)

4 cups Mushrooms (sliced)
2 Tbsps butter

Preparation steps

Heat the oven to 200°C (180° fan) | 400F | gas 6.

Season the inside and outside of the pheasants with salt and pepper. Wash the thyme and stuff half inside each pheasant. Place the bacon over the top of the breasts. Place in a roasting tin and pour in the white wine. Roast in the oven for 1 hour

Remove the roasting tin from the oven and place the pheasants in the oven to keep warm. Heat the butter in the roasting tin and fry the mushrooms. Pour in the cream and loosen the juices. Reduce the sauce by a third.
4.
Serve the pheasants together with the mushroom sauce.
