250 grams brown sugar
150 grams butter
100 grams ground almonds
400 grams Pastry flour
1 tsp cinnamon
¼ tsp ground cloves
¼ tsp ground Cardamom
¼ tsp ground Mace
¼ tsp ground allspice
1 tsp Lemon peel
1 Tbsp Cocoa
1 egg
1 tsp potatoes
Pastry flour (for the work surface)
For decoration
1 egg white
150 grams powdered sugar

Preparation steps

For the dough, heat the honey, sugar and butter in a pan while stirring until the sugar has dissolved. Remove from heat, pour into a bowl and let cool. Add the almonds, the flour, spices, cocoa and egg to the butter mixture and knead thoroughly with the dough paddle of an electric mixer. Mix the baking soda with 2 tablespoons of cold water and add to the dough. Continue kneading until the dough doesn't stick to the bowl. Add a little more flour if needed. The dough should be firm but pliable.

Cover the bowl and chill over night in the refrigerator. The next day, preheat the oven to 180°C (approximately 350°F). Roll out the dough on a floured surface to 5 mm (approximately 1/8 inch) thick and cut out star shapes with a cookie cutter or sharp knife. Cut a small hole in the center to hang on strings later. Place the cookies on a lined baking sheet and bake in the preheated oven for 18-20 minutes.

Remove from the oven gently, and let cool on a wire rack. For decoration, beat the egg whites until stiff and gradually add the sugar, until the icing is glossy. Pour into a plastic bag, cut a small corner and decorate the stars as desired. Let dry and string together on ribbons to serve.
