Gingerbread Train
Ingredients
- For the dough
- 250 grams honey
- 250 grams brown sugar
- 150 grams butter
- 100 grams ground almonds
- 400 grams Pastry flour
- 1 tsp cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground Cardamom
- ¼ tsp ground allspice
- 1 tsp Lemon peel
- 1 Tbsp Cocoa
- 1 egg
- 1 tsp potatoes
- Pastry flour (as needed)
- For decorating
- colorful Frosting
- colorful Sugar pearls
Preparation steps
For the gingerbread: Heat the honey, sugar and butter in a saucepan until the sugar has dissolved. Remove from heat, pour into a bowl and let cool. Add the ground almonds, flour, spices and cocoa to a stand mixer. Add the egg and butter mixture and knead thoroughly with a dough hook. Mix the baking soda with 2 tablespoons water and add to the dough. Continue kneading, adding pastry flour as needed, until the dough is shiny and no longer sticky. It should be firm and pliable. Cover and refrigerate overnight.
Preheat the oven to 180°C (approximately 350°F). Spread the dough onto a lined baking sheet (or place in molds for train cars) and bake for 18-20 minutes. Carefully remove the gingerbread from the baking sheet (or molds) and cool on a wire rack. Cut the gingerbread into circles for the wheels and other shapes as desired.
Place the individual parts together and decorate with colored icing and sugar pearls.
