Glazed Chicken Drumsticks with Pink Mashed Potatoes

- 6 chicken Drumsticks
- 6 Chicken wing
- ½ tsp sweet ground paprika
- 1 Tbsp honey
- 1 Tbsp balsamic vinegar
- 2 Tbsps Tomato paste
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- 1 pkg Mashed potatoes (750 ml -1 l liquid)
- 250 milliliters milk
- 250 milliliters water
- 250 milliliters Beet juice
- 60 grams butter
- Parchment paper
Preparation steps
For the chicken: Rinse the chicken under cold water and pat dry. In a bowl, stir the paprika with the honey, balsamic vinegar, tomato paste, olive oil and 1-2 tablespoons water. Season with salt and pepper to taste. Line a baking sheet with parchment paper. Place the drumsticks on the baking sheet and brush with the marinade. Bake on the middle rack of a 200°C (approximately 390°F) oven for 10 minutes. Heat the broiler and place the chicken under the broiler until crispy, about 20 minutes.
For the mashed potatoes: Prepare the mashed potatoes according to the package information with the milk, water and beet juice. Cut the butter into cubes and stir into the potatoes at the end. Place the potatoes on a platter and top with the chicken pieces.
