Preparation steps

1.

Rinse lemons in hot water. Peel one lemon with a vegetable peeler and finely grate zest of the other lemon. Squeeze juice of both lemons. Peel potatoes and dice finely. Cook in salted water combined with lemon peel for about 20 minutes or until soft.

Rinse and spin dry bok choy, separate into individual leaves. Rinse and pat dry chicken. Sprinkle chicken with some lemon juice and lemon zest, season with salt and place in a steamer. Bring broth to a boil in a pot. Blanch bok choy for about 1 minute, remove with a slotted spoon nad rinse in cold water, drain well. Steam chicken, covered, over boiling broth for about 6 minutes.

Drain potatoes, remove lemon peel and mash potatoes with a masher.  Add 2 tablespoons of butter and season with salt and lemon juice.

4.

Heat remaining butter in a pan. Stir in honey and glaze bok choy for about 2-3 minutes, stirring.  

5.

Arrange mashed potatoes on plates. Drizzle with broth and top with chicken and bok choy. Drizzle with butter from the pan and serve.
