18 cups mussels
5 eggs
1 ½ cups cream (at least 30% fat)
cup Ricotta cheese
1 cup Parmesan (grated)
1 Saffron
Dill (to garnish)

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease 4 oven-proof dishes.
2.
Fill a pot with about 2-3 cm water, season with salt and bring to the boil. Cook the mussels in the water for around 5 min until all of them are opened. Dispose of any closed mussels.
3.
Remove the meat from the shells and arrange them in the prepared dishes. Mix together the eggs, cream, ricotta and the parmesan and stir in the saffron. Season with salt and ground black pepper and pour the mixture over the mussels. Bake for 20-25 min and serve garnished with dill.
