Preparation steps
Drain the mango slices and puree, mix with 2 tablespoons of honey, and chile and Tabasco to taste.
Peel garlic, press and mix with pepper, paprika, curry and ginger. Add mango puree and mix well. Rinse the turkey legs in cold water, pat dry and coat with the mango mixture. Wrap in plastic wrap and marinate in the refrigerator overnight.
Place the turkey legs in a roasting pan, pour in the broth, cover and cook in a preheated oven at 200°C (approximately 375°F) for about 1 hour. Remove the lid and cook for an additional 30 minutes.
Meanwhile, peel the pineapple and remove the core. Cut into wide strips. Peel the onion and cut into eight pieces. Peel the pear, cut into quarters and remove the seeds.
At the end of the turkey's cooking time, add the fruit and the onions to the turkey and liquid, baste the turkey legs with the remaining honey and cook for a further 15-20 minutes.
