1 cup butter
1 cup cream cheese
2 cups gluten-free all purpose flour (plus extra for dusting)
2 ¼ cups Walnut (finely chopped)
½ cup light brown sugar
½ tsp ground cinnamon
2 Tbsps milk (more if needed)

Preparation steps

1.
Beat together the butter and cream cheese in a mixing bowl until pale yellow and creamy.
2.
Gradually add half the flour until blended, then add the remaining flour and mix by hand.

Knead until the dough falls off your hands easily. Roll into a ball, place in a bowl, cover with cling film and chill overnight.
4.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line a baking tray with non-stick baking paper.

Stir together walnuts, brown sugar and cinnamon. Stir in enough milk to form a paste.
6.
Turn the dough out onto a floured surface and roll out about 1cm|3/4" thick.
7.
Cut the dough into 5cm|2" squares.
8.
Place about 1 heaped teaspoon of the walnut filling in the centre of each square. Fold the dough around the walnut filling and place on the baking tray. Brush the pastry with a little milk.
9.
Bake for 10-15 minutes until light brown. Place on a wire rack to cool completely.
