These bites are perfect if you suffer from celiacs disease as they don't contain gluten.

If you don't have prosciutto, feel free to use another kind of ham or even bacon.

6 sheets gluten-free phyllo pastry (filo)
0.333 cup butter (melted)
cup Prosciutto (roughly chopped)
10 Quail egg
¾ cup Crème fraiche
1 Tbsp snipped Chives
freshly ground Black pepper

Preparation steps

1.

Heat the oven to 375°F. Grease 10-12 muffin tins with melted butter.

Spread each filo sheet with melted butter and cut in half.

Cut each half into quarters and arrange the pieces in a muffin tin Repeat with the remaining filo sheets.
4.

Place a little creme fraiche in each pastry case and top with prosciutto.

5.
Break an egg on top and spoon over the remaining creme fraiche. Sprinkle with chives and season with black pepper.
6.
Bake for 10-12 minutes until the eggs are just set.
