- ⅔ cup Herb cream cheese
- 4 ozs Frozen Spinach (thawed, well drained)
- salt
- freshly ground Black pepper
- grated Nutmeg
- 18 ozs gluten-free puff pastry
- 18 ozs skinless Salmon fillet
- 1 egg (beaten)
Preparation steps
1.
Heat the oven to 400°F. Line a large baking tray with non-stick baking paper.

Mix together the cream cheese and spinach. Season to taste with salt, pepper and nutmeg.

Roll out the pastry in a rectangle large enough to enclose the salmon and place on the baking tray.

Season the salmon with salt and pepper

Spoon half the spinach mixture over the middle of the pastry and place the salmon on top. Spoon the remaining spinach on top of the salmon.
6.
Brush one side of the pastry with beaten egg and fold over the other side to make a neat parcel. Trim off any excess pastry.
7.
Make 3 slits in the top of the pastry and brush with the remaining beaten egg.
8.
Bake for 30-40 minutes, until the salmon is cooked and the pastry is brown and crisp.
