- 2 ¼ cups gluten-free all purpose flour
- ⅔ cup unsalted butter
- 0.333 cup superfine caster sugar
- powdered sugar
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Put the flour into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar and knead with your hands to form a dough.
4.
Shape the dough into a cylinder shape, about 7cm|3" in diameter and cut into rounds about 1cm| 3/4" thick.
5.
Place on the baking trays and mark with a knife to form grooves.
6.
Bake for 10-15 minutes, until light golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
Sift icing sugar over the biscuits.
