- 4 large eggs (separated)
- 1 cup caster sugar (scant)
- 1 ⅛ cups Mascarpone
- 1 cup cream (48% fat)
- 20 gluten-free ladyfingers
- ⅔ cup Marsala wine
- 250 meters warm, strong, black Coffee
- 2 Tbsps Coffee liqueur (or brandy)
- 1 large Orange (segmented)
Preparation steps
1.
Whisk together the egg yolks and sugar with an electric whisk until pale and creamy. Whisk in the mascarpone until well combined.

Whisk the cream until thick and gently fold into the mascarpone mixture.
3.
Whisk the egg whites until stiff but not dry and fold lightly into the mascarpone mixture.
4.
Spread half the mixture on the base of a deep serving dish.
5.
Dip half the sponge fingers in the Marsala and place on top of the cream mixture.
6.
Mix the coffee with the coffee liqueur or brandy. Dip the remaining sponge fingers in the mixture and place on top of the Marsala soaked sponge fingers. Pour over any remaining coffee mixture.
7.
Spoon the remaining cream mixture evenly over the sponge fingers. Arrange the orange segments on top. Cover and chill for at least 5 hours before serving.
