Preparation steps

Peel potatoes, cook, and while hot press through a potato ricer. Mix with flour and Parmesan. Add the eggs. Season with salt, pepper, and nutmeg. Knead the potatoes together to form a dough.

Shape into finger thick rolls and cut about 3 cm (approximately 1 inch) pieces. Press with a fork. Cook gnocchi in plenty of salted water at a simmer. Leave until done, when they float to the surface.

Heat butter in a deep pan and lightly fry the sage leaves. Add the gnocchi to the sage leaves and toss briefly.
To serve: Serve while warm with Parmesan.
