800 grams potatoes
120 grams Pastry flour
80 grams Parmesan
2 eggs
salt

10 grams butter

Preparation steps

1.

For the gnocchi, peel and cook the potatoes and press through a potato ricer while still hot. Mix with the flour, 40 grams of Parmesan (approximately 1 ounce) and the eggs. Season with salt, pepper and nutmeg. Bring everything together to form a dough and knead well.

Roll into finger shapes and cut about 3 cm long pieces (approximately 1 inch). Press grooves into the edges with a fork.

Heat plenty of salted water in a pan (do not boil), add the gnocchi and leave until done (they float to the surface when cooked).

Froth up the butter and stir in the creme fraiche and remaining Parmesan cheese. Season with salt and pepper.

To serve, drain the gnocchi well and add to the cream. Swivel about briefly and transfer to bowls.

Serve garnished with sage.
