1 kilogram starchy potatoes
250 grams Pastry flour
1 tsp salt
½ bunch fresh rosemary
100 grams butter
60 grams grated Parmesan

Preparation steps

Rinse the potatoes, and cook in boiling salted water for 30 minutes. Drain the potatoes and let dry slightly. Peel the potatoes and pass through a press. Cool lightly, then mix the potatoes with the flour and salt. Form the dough into finger-thick rolls, cut into pieces, and indent the pieces with the tines of a fork. Place on a cutting board and let rest for 15 minutes.

Bring a large pot of salted water to a boil. Add the gnocchi and simmer for 5 minutes, until they rise to the top. Remove from the water and drain well. Melt the butter in a pan. Remove the leaves from the rosemary, add to the pan, and brown briefly. Arrange the gnocchi on plates, and top with the rosemary butter. Garnish with parmesan cheese, salt, and pepper and serve.
