Preparation

Kitchen utensils

1 Paper towel, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 flacher Pot mit Deckel, 1 Measuring cups, 1 Peeler, 1 großer Pot, 1 Sieve

Preparation steps

1.
Heat the oven to 160C (140C fan) 325F, gas 3.
2.
Remove the seeds from the red peppers, slice into strips and toss with the salt and sugar. Lay on a greased baking sheet and put in the oven for about 45 minutes.
3.
Meanwhile, make the pancakes. Put the flour in a bowl, add the salt, egg and milk and beat well to make a smooth batter.
4.
Heat a little of the oil in a 20 cm/8 " frying pan, pour in about a teacup of batter and tilt the pan so the mixture spreads evenly. Cook for about one minute then flip the pancake with a palette knife. Cook for another minute or until golden brown.
5.
Repeat with the rest of the batter, adding more oil as necessary. Stack the pancakes between sheets of kitchen parchment and cover with a clean tea towel to keep warm.
6.
Remove the peppers from the oven and turn the heat up to 200C (180C) 400F, gas 6.
7.
Fold the pancakes into quarters and place on a baking sheet. Put half a slice of serrano ham onto each, top with a slice of goats cheese and season with salt and pepper.
8.
Bake in the oven for about 8 minutes or until the goats cheese starts to melt. Serve with the red peppers scattered over.
