500 grams Goat cheese
40 grams chopped Walnut
2 Tbsps chopped Tarragon
1 Tbsp lemon juice
salt

4 ripe Tomatoes
2 Tbsps balsamic vinegar
2 Tbsps olive oil
3 Tbsps finely chopped Basil
2 onions
vegetable oil (for frying)
Tarragon (for garnish)

Preparation steps

1.

Mix and season goat cheese with nuts, chopped tarragon leaves, lemon juice, salt and pepper. Rinse tomatoes, blanch, peel, quarter, core and dice.

Stir tomatoes with balsamic vinegar, olive oil, salt and pepper and stir in the finely chopped basil. Peel onions, cut into thin rings and fry until golden brown in hot oil. Remove and drain on paper towels.

3.

Divide goat cheese into 2 portions, shape into round layers, put on plates and spread with tomato mixture. Serve garnished with onion rings and tarragon.
