150 grams Pastry flour
1 pinch salt
1 egg
100 grams butter

150 grams Goat cheese (log)
2 scallions
1 Tbsp olive oil
1 egg
150 milliliters Whipped cream
salt

Preparation steps

For the dough, put all the dough ingredients in a bowl and knead well. Form into a ball, wrap in plastic wrap and chill for 30 minutes in the refrigerator.

Grease 4 individual quiche molds and preheat the oven to 180°C (approximately 350°F).

Roll out the dough between plastic wrap to about 4 mm (approximately 1/4-inch) thick. Divide dough into four portions and line the quiche molds with the dough. Dock bottom surface several times with a fork and pre-bake for about 5 minutes in the oven until lightly browned. Remove from oven and cool on a wire rack.

For the filling, cut the goat cheese into thin slices. Rinse the scallions, trim, cut into thin rings and sauté in a skillet in olive oil until translucent. Arrange in layers with the goat cheese slices in the quiche molds.

Whisk egg and the cream together, season with salt and pepper and pour evenly over the filling.

6.

Put the quiches in the preheated oven and bake for about 20 minutes.

7.

For serving, rinse the mache thoroughly, trim, spin dry and spread on plates.

8.

Remove goat cheese quiches from the molds and arrange on the mache. Serve immediately.
