These sticks are packed with protein from the goat cheese and vitamins A and C from the wild garlic.

Serve these sticks with pieces of whole wheat bread for added fiber.

12 Wild garlic leaf

1 Tbsp honey
1 Tbsp lemon juice
½ red Bell pepper
½ yellow Bell pepper
2 Tbsps Pine nuts
1 Tbsp olive oil

Preparation steps

1.

Rinse wild garlic, blanch for 30 seconds in boiling salted water, drain and pat dry. Rinse and dry peppers, halve and remove seeds and ribs and cut flesh into cubes.

Toast pine nuts in a dry pan, remove from heat and cool. Cut cheese into 6 sticks. Wrap 2 wild garlic leaves around each cheese stick. Roast under a broiler for 1-2 minutes or until golden brown, watching carefully.

Heat oil in a pan and saute peppers, then season with salt and pepper. Drizzle with lemon juice and honey, sprinkle with pine nuts, mix well and arrange on plates. Top with cheese sticks and drizzle with remaning honey sauce. Serve.
