1 Small bowl, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Sieve, 1 Citrus juicer

Preparation steps

Preheat the oven to 220°C(200° fan)|425F|gas 7. Place the duck or goose fat in a roasting tray and place in the oven to heat up.
2.
Put the potatoes in a large pan of salted water and cook over a moderate heat until boiling. Boil for 5 minutes then drain well, and return the potatoes to the pan.
3.
Cover with a lid and shake hard to roughen the surface of the potatoes.
4.
Remove the hot fat from the oven and carefully add the potatoes, seasoning with salt and pepper.
5.
Roast for 40-45 minutes, turning once, until the potatoes are golden brown.
