2 Zucchini (finely grated)
4 Tbsps breadcrumbs
2 Tbsps Parmesan (grated)
4 eggs (size L)
½ tsp Chili powder
Nutmeg (freshly grated)
clarified butter

Preparation steps

Place the courgette in a sieve and drain. Wring out any remaining liquid with your hands and transfer to a bowl. Add the breadcrumbs, cheese, eggs, salt, ground black pepper, chilli and some nutmeg and mix well.

Heat 2 tbsp clarified butter in a pan and fry portions (1-2 tbsp) of the courgette mixture in the hot fat. Press down flat and fry on both sides on a medium heat until golden brown. Remove from the pan and serve with lemon wedges – the fritter tastes excellent drizzled with lemon juice.
