2 handfuls baby Spinach (washed)
1 cup Blue cheese (crumbled)
4 Tbsps Pomegranate seed

Preparation steps

Heat the oven to 200ºC (180º fan), 400ºF, gas 6.

Place the pear quarters in an ovenproof dish. Mix together the honey and lemon juice and pour over the pear quarters, ensuring they are well covered. Bake in the oven for 10 - 15 minutes or until the pears are just tender, basting after 5 minutes.
3.
Place the spinach on serving plates, arrange the cooked pears on top and scatter over the crumbled cheese and pomegranate seeds. Serve immediately.
