- 4 slices Beef fillet each approx. 160 g (6 oz)
- 2 Tbsps Oil
- 1 shallot (peeled and finely chopped)
- 1 cup dry Red wine
- 1 Tbsp balsamic vinegar
- 4 Pear (peeled, halved and pitted)
- ½ Cinnamon stick
- 1 Tbsp Cranberry (from a jar)
- salt
- ground peppers
- parsley (to garnish)
Preparation steps

Preheat the oven to 80°C (176°F/Slow)

Season the beef fillets with salt and pepper and fry on both sides at a high temperature.

Remove from the skillet and cook in the oven for about 15 minutes until rare.
4.
Sauté the shallot in the meat juices and quench with the red wine and the balsamic vinegar.
5.
Add the pear halves and the cinnamon to the mixture. Allow to simmer for about 5 minutes so that the pears are well soaked but not too soft.
6.
Remove the pears from the skillet and allow the broth to reduce to about half.
7.
Remove the cinnamon and stir in the cranberries. Season with salt and pepper and re-add the pears.
8.
Take the meat out of the oven and cut into thick pieces. Serve on plates with the meat arranged on top of the red wine-pears and the sauce. Garnish with parsley.
