Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.

To make the caramel webs, melt the sugar in the water in a small pot and allow to caramelise until dark brown. With a small spoon carefully drizzle the caramel in 4 web shapes onto baking paper and leave to harden.

Beat the egg and the egg yolks with 50 g sugar until a thick creme forms. Bring the milk and cream to the boil and gradually add it to the egg mixture, stirring continuously.

Sieve the mixture and pour into moulds. Fill a baking dish with approx. 2 cm boiling water. Place the moulds in the dish and solidify in the oven for 25-30 minutes. Remove and leave to cool.

Melt the remaining sugar in a pot with 2 tbsp water and allow to caramelise until dark brown. Pour the caramel sauce onto plates and knock out the creme caramel on top. Remove the caramel webs from the baking paper and use to garnish the creme caramel. Serve with candied kumquats if desired.
