2 egg yolks

Preparation steps

Preheat the oven to 175°C/350°F. Put a deep cookie sheet into the oven and fill three quarters full with boiling water. Put 70 g/1/3 cup sugar into a pan and heat until lightly caramelized. Put 1 tablespoon of the caramel into each of 4 shallow ovenproof dishes (10-12 cm/4-5 inches in diameter). Whisk together the eggs, egg yolks, the rest of the sugar, cream and warm milk, strain through a sieve and pour onto the caramel in the dishes. Set the filled dishes in the deep cookie sheet in the oven and cook for about 30 minutes (test to see if they are cooked by inserting a cocktail stick). Take out of the oven, let cool and chill for at least 3 hours. To serve, briefly dip the dishes in hot water, run the tip of a knife around the rim and turn out onto dessert plates. Serve with fresh berries of your choice.
