- 2 Tbsps butter
- 1 onion (finely chopped)
- 1 red chili pepper (deseeded and finely chopped)
- 2 Tbsps flour
- 3 cups vegetable stock
- 2 cups canned Sweet corn (drained)
- ½ cup cream (30% fat)
- 2 rashers Bacon (fried till crisp)
- parsley (to garnish)

1 Food processor, 1 Measuring cups, 1 Large knife, 1 Cutting board, 1 Pot, 1 Baking sheet, 1 kleine Casserole dish, 1 Sieve, 1 Slotted spatula
Preparation steps

Heat the butter in a large pan and gently cook the onion until soft. Reserve a little of the chopped chilli for the garnish and add the rest to the pan.

Sprinkle the flour into the pan, cook for 1 minute, stirring all the time, then gradually add the vegetable stock.

Bring to a boil then simmer gently for 10 minutes. Reserve about a quarter of the sweetcorn and add the remainder to the pan. Blend until smooth then pass through a fine sieve into a clean pan.

Stir in the cream and the remaining sweetcorn, reheat gently and season with salt and pepper. Serve the soup in warmed bowls garnished with the remaining red chilli, the crumbled bacon and the parsley.
