Chanterelles contain fiber and are a good source of vitamins B and D, as well as minerals, including selenium and copper. Eating them may help stimulate your immune system.
If you want this to be vegetarian, leave out the bacon and use vegetable broth.

- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 1 Tbsp butter
- ½ cup Bacon (diced)
- 6 cups Chanterelle (chopped)
- Nutmeg
- 1 handful thyme (half chopped, half set aside to garnish)
- ¼ cup dry white wine
- 3 cups Meat stock (beef or veal)
- 0.333 cup Sour cream
Preparation steps

Fry the onion and the garlic in the butter for a few minutes. Add the bacon and fry for another few minutes. Add the mushrooms and season with salt, ground black pepper and a pinch of nutmeg. Stir in the chopped thyme.

Deglaze with the wine and reduce slightly. Add the stock, bring to the boil and then remove from the heat.

Mix the sour cream with 3-4 oz of the soup and then transfer the mixture into the soup. Season to taste and serve in warm bowls garnished with the remaining thyme.
