- 2 ½ cups pink Radish (finely grated)
- 2 ½ cups white Radish (finely grated)
- 4 Tbsps white balsamic vinegar
- 4 Tbsps Canola oil
- sugar
- 1 ¼ inches Cucumber (deseeded and grated)
- 4 tsps Salmon roe
- Fresh herbs to garnish (chives and cress)
Preparation steps

Put the two types of radish in separate bowls with a little salt and some water and soak for 15 minutes.

Meanwhile, for the dressing, whisk together the vinegar, oil, salt and a pinch of sugar and check the seasoning.
3.
Squeeze the moisture from the two bowls of radish and spoon into glasses. Drizzle over the dressing and serve garnished with cucumber, roe, and herbs.
