- 6 sheets gelatin
- ¼ cup Orange juice
- ¼ cup Pineapple juice
- 1.333 cups lychee juice
- 4 tsps Coconut liqueur
- ½ cup Quark (well-drained)
- lemon zest (from an unwaxed lemon)
- 2 Tbsps powdered sugar
- 1 egg white
- 1 ⅔ cups Sparkling wine (German sparkling wine)
- 2 Tbsps Elderflower liqueur
- 1 cup Fruit (melon, pineapple and dragon fruit)
- 1 Tbsp Pomegranate seed
- Pansy (to garnish)

1.
Soak two sheets of gelatine in cold water.

Heat the orange juice with the pineapple juice. Squeeze out the excess moisture from the gelatine and dissolve it in the warmed juice. Pour into 4 pointed moulds and leave in the refrigerator for at least 2 hours to set.

Soak the remaining gelatine in cold water.

Heat the lychee juice with the coconut liqueur; squeeze out the excess moisture from the gelatine and stir into the warmed liquid. Leave to cool then pour over the fruit jelly in the moulds. Chill for a further 3 hours.

Stir together the quark, a pinch of lemon zest and the icing sugar to a creamy consistency. Whisk the egg white until stiff and fold into the quark. Chill for at least 1 hour.
6.
Mix the sparkling wine with the cordial, divide between 4 deep dishes and add the fruit balls and the pomegranate seeds. Turn the jellies out onto the plates. Scoop 4 quenelles of quark mixture and add one to each serving. Serve garnished with the pansy petals.
