1 ⅔ cups milk
2 Basil
6 egg yolks
½ cup sugar
0.333 cup all-purpose flour
1 tsp vanilla extract
cup cream (48% fat)
2 cups sliced Strawberries
½ cup powdered sugar
½ cup Rose wine
9 ozs madeira cake (sliced)
3 Tbsps Lemon curd
To decorate

Preparation steps

1.
Heat the milk and basil in a pan until almost boiling. Remove from the heat, cover and leave to stand for 10-15 minutes. Remove the basil leaves.

Whisk together the egg yolks, sugar and flour until smooth, then gradually whisk in the milk. Return to the pan, bring to a boil stirring constantly, then simmer for 5 minutes until thickened. Pour into a bowl, cover the surface with cling film and chill.

Whisk the cream until thick and fold into the custard.

Put the strawberries in a bowl, cover with icing sugar and add half the wine. Chill for 1 hour.

Spread half the cake slices with lemon curd and place the remaining cake slices on top. Cut into cubes and place in the bottom of 4-6 serving glasses.. Drizzle with the remaining wine.
6.
Cover with some of the custard and top with strawberries. Spoon the remaining custard on top and arrange the remaining strawberries on top. Chill for at least 2 hours.
7.
Whisk the cream until thick and spoon into a piping bag.
8.
Pipe a swirl on top of each trifle and sprinkle with basil.
