1 cup white Chocolate couverture
¼ cup butter
¼ cup sugar
cup Champagne (or dry sparkling wine)
1 tsp lemon juice

Preparation steps

1.
Melt the white chocolate in a bain-marie set over a half-filled saucepan of simmering water.

Beat the butter and sugar until pale and fluffy. Add the lukewarm couverture, champagne and lemon juice and continue beating until the mixture has a pipe-able consistency.
3.
Put the mixture into a piping bag with a medium-sized plain nozzle and pipe blobs approximately 1.5 cm | 0.75" in size on a baking tray lined with baking parchment. Chill for about 2 hours.

Carefully the blobs into balls and put into the freezer for 30 minutes.
5.
To decorate: Melt half of the white chocolate couverture in a bain-marie set over a half-filled saucepan of simmering water. Leave to cool slightly.
6.
Dip the frozen balls into the chocolate couverture, holding them on a fork, and place on baking parchment until beginning to dry.
7.
Shave the rest of the chocolate couverture and roll the truffles in the shavings. Cover and store in a cool place.
