Ingredients

For the tomato sauce
1 cup Celeriac (peeled and diced)
1 onion (diced)
2 garlic cloves (diced)
2 Tbsps olive oil
¼ cup dry Red wine
2 ½ cups canned Tomatoes
For the meatballs
1 stale Bread roll
1 onion (finely chopped)
1 garlic clove (finely chopped)

2 eggs
2 Tbsps fresh Basil (chopped)
4 cups minced lamb
breadcrumbs
1 ¾ cups Feta (diced)
Basil (to garnish)

Preparation steps

To make the sauce, fry the celeriac, onions and garlic in hot oil for 1 to 2 min. Deglaze with the wine, add the tomatoes and simmer for around 15 min stirring occasionally. Season with a pinch of sugar, salt and ground black pepper.

To make the meatballs, soften the bread roll in lukewarm water. Fry the onion and garlic in one tablespoon oil, remove from the heat and leave to cool. Ring out the bread roll and mix with the eggs, basil, meat, onion and garlic. If necessary at some breadcrumbs so that a pliable dough is formed. Season with salt and ground black pepper and shape into small meatballs. Make a hole in each meatball, place a cube of cheese in each one and closed the meat around it.

Fry the meatballs in hot oil for about 5 to 6 min until golden brown. Serve in the sauce garnished with the remaining feta cheese and the basil.
