- 3 ripe Tomatoes (rinsed and sliced into wedges)
- 1 cup cherry Tomatoes (rinsed and trimmed)
- 1 small Red onion (peeled and cut into thin rings)
- 1 seedless Cucumber (peeled and cut into bite-size pieces)
- 1 red Bell pepper (rinsed; trimmed and chopped)
- 1 handful Romaine lettuce (generous)
- 2 Tbsps thyme
- 2 Tbsps fresh Chives
- 1 ½ cups greek Feta (cubed)
- ½ cup pitted Kalamata Olive
- ¼ cup good-quality olive oil
- 3 Tbsps Red wine vinegar
- ½ tsp dried oregano
- salt (to taste)
- freshly ground Black pepper (to taste)
- crusty Bread to serve (optional)
Preparation steps
1.
Combine vegetables, thyme, chives, feta and olives in a large bowl. In a small bowl, combine oil, vinegar, oregano, salt and pepper, whisking to blend. Pour dressing over salad. Toss well and serve with crusty bread, if desired.
