- 400 grams White pepper
- 1 Tbsp butter
- 75 milliliters Vegetable broth
- 1 tsp grated Lemon peel
- 1 Tbsp lemon juice
- 50 grams Crème fraiche
- 2 eggs
- salt

- allspice
- cayenne pepper
- 4 ramekins Heart shapes (each about 150 ml)
- butter (for ramekins)
- Arugula (or dandelions)
- Ground red pepper
- Curry (for dusting)
Preparation steps

Rinse asparagus and cut into small pieces. Heat butter in a pan and saute asparagus for a few minutes. Add broth and simmer, covered, for about 15 minutes or until soft on low heat.

Preheat the oven to 175 ° C preheat.

Combine asparagus with lemon zest, juice and sour cream in blender, puree finely and whisk in eggs. Season with salt, pepper, allspice and cayenne pepper.

Buter ramekins and pour asparagus mixture into them. Place ramekins in a large baking dish, add hot water to the pan and bake in preheated oven at 175°C (approximatley 350°F) for about 45 minutes.

Arrange on plates and garnish with some green asparagus and arugula. Sprinkle with pepper and curry powder and serve warm.
